The organic Farm owns approximately 3,000 olive trees of the “frantoio” variety on the nearby hillside. With these olives we produce our flagship, the “VICOPISANOLIO –ORGANIC TUSCAN PGI ” Extra virgin Olive oil. The Farm also owns a vast orchard with peach, pear and kiwi trees; a pine forest where many free-range wild boars live.

The olive grove, the fruit orchard and the vegetable garden are organically cultivated using natural fertilizers and, thanks to the unparalleled microclimate of Monte Pisano, yield excellent fruit, both in quantity and, more importantly, quality-wise.

Our olives are hand-picked when they have reached optimum ripeness. They never come into contact with the ground and they are pressed in our oil mill within a few hours from the picking.

The “VICOPISANOLIO – ORGANIC TUSCAN PGI ” Extra virgin Olive oil has a lovely green-gold colour. If it is consumed just after the pressing, it is lively, stings slightly the palate and has a pleasantly bitter flavour. Then, over time, it mellows and softens.

At the ground floor of the farm is situated the Ancient Tuscan Oil Press of “Rio Grifone”. It uses the typical pressing method, strictly and entirely “cold-pressed” with two parallel systems which perform: defoliation, washing, grinder and/or crusher, malaxation, two phases decanter, centrifuge, acidity, peroxide and polyphenol analysis, storage in stainless steel container at a stable temperature under 18° C and the bottling . Using olives cultivated and harvested from the best organic producers in Monte Pisano and crushed within 24 hours in our Oil Press we produce  The RIO GRIFONE BIO Extra Virgin. It has a consistent scent of fresh grass and just ripe olives. It is rich in hints of almond and artichoke with a balanced and harmonious flavor of medium intensity. It has a beautiful golden-green color; on the palate it is fruity and elegant.

Extra virgin olive oil “Vicopisanolio” – Tuscan PGI – Organic has a lovely green-gold colour; it tastes fruity and refined. If it is consumed when it has just been pressed, it is lively, stings the palate slightly and has a pleasantly bitter flavour. Over time it mellows and sweetens. Used “raw” in the kitchen and at the table, it imparts a unique flavour to bruschetta and salads, soups and stews, fish and grilled meats. Its sweet, delicate and very balanced flavour is the most important features of our product.
